Would anyone know when the Huntington Hopkins Hardware Company opened its store/office in San Francisco? I believe this was in the late 1860s.

The San Francisco City Directory would be the first place I'd look. California State Library has them, as do many other libraries.

And at the California State Railroad Museum Library; the corporate reference files there are pretty tight on HHHCo for mostly obvious reasons.
