Can you help me with some info on Southern Pacific freight trains that would come through Salinas on a daily basis in 1916? If you don't have this information, would you know where I can get it.

Passenger train schedules were published, but we have no knowledge of any such freight train schedules being published, so it is quite possible that the details that you are seeking have not survived the passage of time.
You might want to look through microfilmed copies of the local newspapers of that era on the off chance that some of these historical details were mentioned in a news story.
